Ingredients for 8 people

  • 200g rolled oats​
  • 1 litre milk​
  • 1 tsp salt​
  • 1 tbs butter​
  • Sugar, honey or maple syrup to taste​
  • De Nigris Recipe Platinum Label Balsamic Vinegar​
  • Toppings of your choice (e.g., nuts, nut butters, blueberries, blackberries, peach slices, coconut etc)

For the recipe

Heat a large saucepan over medium heat. Add the oats and toast them, stirring frequently, for about five minutes, until golden brown and fragrant.

Add the milk and salt to the saucepan and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and continue cooking for 10-15 minutes, stirring occasionally, until the oats are cooked, and the porridge has thickened to your desired consistency.

Stir in the butter until melted and well combined. Allow to cool and then divide and spoon the porridge into the compartments of a deep muffin tin. Freeze for at least three hours, then turn the frozen porridge portions out of the tin, place in freezer bags, and return them quickly to the freezer until required.

To serve, place the required number of servings in a microwave-safe bowl and microwave on high until the porridge is thoroughly defrosted and heated through. (Stir part way through microwaving, to ensure even heating, at which point you may wish to add additional milk to loosen the consistency of the porridge, and sugar, honey to maple syrup to sweeten it to taste).  Transfer the hot porridge to serving bowls, swirl with a generous drizzle of De Nigris Recipe Platinum Label Balsamic and add your favourite toppings.
