Ingredients for 4 people

  • 4 carrots (about 280 g)
  • 300 g cherry tomatoes
  • 1 apple
  • Juice of ½ lemon
  • 20 g  pine nuts
  • 200 g feta cheese
  • 3 sprigs dill leaves
  • 3 tbs extra virgin olive oil
  • 3 tbs De Nigris Apple Cider Vinegar with Mother
  • Salt and pepper, to taste

For the recipe

Use a potato peeler to create thin shavings  of carrot.  Core and peel the apple, and cut it into bite-sized piecesSprinkle the apple with lemon juice to stop it from turning brown and combine  with tomatoes in a salad bowl. Fry pine nuts in a dry pan until golden, then add to the saladCrumble the feta and add it to the bowl. Season to taste add dill, then drizzle with Apple Cider Vinegar and olive oil, toss salad well before serving.
