The slow regeneration ritual of racking and tamping, a synergy between past and present that gives our vinegar an inimitable, balanced flavour

The perpetual transformation is a complex regeneration process, a continuous flow that transforms the old into the new through racking and tamping. With decanting, a continuous transfer of balsamic vinegar from one barrel to another begins, a slow and constant practice, like a ritual that allows contamination with various woods and barrels of different sizes.

The master vinegar maker, guardian of this art, directs the practice, gradually enriching the product with aromas and complexity, while respecting the resting times required by nature. Augmentation, on the other hand, is the crowning achievement of this perpetual transformation. With this practice, a small quantity of the youngest and most excellent vinegar is added to the most mature casks, complementing the racking. In this dance of vinegar regeneration, a new complex of aromas is infused, transforming the product into something inimitable and distinctive.

Our Story

  • 1889

    Armando de Nigris started the first wine production.

  • 1936

    Obtaining a Licence for the Practice of Selling to the Public.

  • 1939

    The first bottle of ‘39 laid the foundations of the iconic De Nigris shapes and products with a recipe that would be handed down to future generations.

  • 1946

    The ageing process in family-owned barrels is fully in place, guaranteeing over time a product with a characteristic aroma and taste thanks to the hints of old wood.

  • 1947

    The first filing of a trade mark patent with the Ministry of Industry and Trade takes place.

  • 1950

    The company passed into the hands of Marcello de Nigris, who followed in his father’s footsteps in wine production, and then expanded production to vinegar.

  • 1977

    With the first enquiries, the first steps were taken overseas to develop and consolidate the brand in the USA, later becoming one of the largest exporters of vinegar and seasoning.

  • 1993

    Awarding Marcello de Nigris at the 21st Work and Economic Progress Awards with the Diploma and Gold Medal, for having particularly distinguished himself on International Markets.

  • 2017

    De Nigris flagship stores open in several Italian cities. Among them, the Milan Boutique enters the Louis Vuitton City Guide.

  • 2018

    Inauguration of the Balsamico Village, the first Balsamic Vinegar theme park, a trail that tells, from the vineyard to the ageing barrels, how Balsamic vinegar of Modena is produced.

  • 2022

    It was awarded the title of historic brand of national interest by the Ministry of Economic Development, crowning a journey of more than 130 years.

  • 2024

    The 135-year anniversary represents a bridge between the past and the future, symbolising the ongoing commitment to remain true to one’s roots while looking to the future.
